Polenta Pizza

1 tube precooked polenta
Pizza sauce
Part-skim mozzarella, shredded

Heat toaster oven to 375°F. Cut a 1/2-inch-thick slice from a tube of precooked polenta. Place on foil, spread with 2 teaspoons of pizza sauce, then sprinkle with 2 teaspoons mozzarella cheese. Bake until cheese melts.

Bubble Pizza

1 1/2 lb. ground beef
1 jar pizza sauce
2 tubes refrigerator biscuits
1 1/2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese

Brown the beef in a skillet and drain.

Stir pizza sauce into browned hamburger and simmer until heated through.

Quarter the biscuits and place in a 13-in x 9-in x 2-in greased baking dish. Top with beef mixture.

Bake uncovered at 400°F for 20 minutes.

Sprinkle with cheeses and bake 5-10 more minutes.

White & Gold Pizza

3 tablespoons olive oil, divided
1 large sweet onion, thinly sliced
1 lb. frozen pizza dough, thawed
1 large clove garlic, minced
4 oz. (1/2 of 8-oz. pkg.) Philadelphia Cream Cheese, softened
3/4 cup Kraft Shredded Mozzarella Cheese
1/2 cup Di Giorno Grated Romano Cheese
1/2 teaspoon crushed red pepper

Heat oven to 425ºF.

Heat 1 Tbsp. oil in large skillet on medium heat. Add onions; cook 15 to 20 min. or until tender and golden brown, stirring occasionally.

Meanwhile, place pizza dough on lightly floured baking sheet; pat to 16×12-inch rectangle. Mix garlic and remaining oil; spread onto dough. Bake 10 min.

Spread cream cheese onto crust; top with remaining cheeses, onions and crushed pepper. Bake 10 to 12 min. or until crust is golden brown.

Makes 6 servings.

Vegetable Pita Pizzas

2 large whole wheat pita bread rounds
Nonstick cooking spray
1/2 cup assorted fresh vegetables (such as small broccoli or cauliflower florets, red sweet pepper strips, sliced fresh mushrooms, and/or chopped carrot)
1/4 cup pizza sauce
1/4 cup shredded mozzarella cheese (1 ounce)

Preheat oven to 400°F. Place pita bread rounds on a baking sheet. Bake for 5 minutes.

Meanwhile, coat an unheated small skillet with nonstick cooking spray. Preheat over medium heat. Add the vegetables; cook and stir until crisp-tender.

Spread pizza sauce on pita bread rounds; sprinkle with cooked vegetables and cheese.

Bake for 8 to 10 minutes more or until light brown. Serve warm.

Makes 4 servings.

Grilled Spinach Alfredo Pizza

1 cup Alfredo sauce
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 teaspoon crushed red pepper
1 lb. refrigerated pizza dough, at room temperature
2 tablespoons olive oil
1 cup Kraft Shredded Mozzarella Cheese
1 boneless skinless chicken breast (4 oz.), cooked, chopped (about 1 cup)
4 slices Oscar Mayer Bacon, cooked, crumbled

Heat grill to medium heat.

Cook and stir Alfredo sauce in medium saucepan on medium heat 4 to 5 min. or until heated through. Stir in spinach and crushed pepper. Keep warm.

Divide pizza dough into 4 pieces. Roll each piece into 12-inch round on lightly floured surface. Brush evenly with half the oil. Place, oiled-sides down, on grill grate. Grill 5 min. or until bottoms are golden brown and lightly charred. Brush with remaining oil; turn.

Top with spinach mixture, cheese, chicken and bacon; cover grill with lid. Grill 5 to 7 min. or until bottoms of crusts are golden brown and cheese is melted.

Bitty Beef Pizzas

2 pounds ground beef
1 teaspoon salt
1 small green pepper, cut in rings
2 cans (8 ounces each) refrigerated biscuits
2 cans (8 ounces each) pizza sauce
12 ounces shredded mozzarella cheese
16 small stuffed green olives, sliced
1 can (2 1/2 ounces) sliced mushrooms, drained

Brown beef lightly in a frying pan; drain on absorbent paper and set aside. Season with salt. Add green pepper reings to frying pan and cook slowly 4-5 minutes; drain on absorbent paper.

Roll out biscuits on a lightly floured board; cut into circles 4-5 inches in diameter. Place circles on a baking sheet; spread 1 tablespoon pizza sauce on each biscuit circle.

Top biscuit circles with cheese and beef. Place green pepper rings on a third of the pizzas, sliced olives on another third and sliced mushrooms on the remaining third.

Bake in preheated 400° oven for 10-12 minutes.

Caramelized Onion Focaccia

3 large sweet onions, thinly sliced
2 tablespoons butter
salt and pepper, to taste
1 tablespoon marsala or other cooking wine, sherry, port or sweet vermouth
2 tablespoons brown sugar
focaccia bread, store-bought crust or refrigerated pizza dough
grated Parmesan cheese

Melt butter in skillet. Add onions and cook until tender. Season with salt and pepper. Add marsala and brown sugar and allow to simmer until thick and caramelized. Spread over focaccio or other crust. Sprinkle with Parmesan cheese. Bake at 375° until onions are bubbly and cheese melts.
