Biscuit Mix

10 cups flour
1 2/3 instant nonfat dry milk
1/3 cup baking powder
2.5 teaspoons salt
1 2/3 cups shortening

Mix dry ingredients thoroughly in a large container. Cut in shortening until fine crumbs are obtained.

Store tightly covered, in refrigerator. Use within 3 months.

Biscuits

3 cups biscuit mix
2/3 cup water

Preheat oven to 425°F. Stir most of the water with the mix. Add more water to make a soft dough that is not too sticky to knead. Knead dough 15 times on a lightly floured surface. Pat or roll dough into a square about 7 x 7 inches. Cut into 16 pieces and place on ungreased baking sheet. Bake until lightly browned, about 12 minutes.

Sand Art Brownies

In large canning jar (or mayonnaise jar since it doesn’t get heated), layer

3/4 teaspoon salt
1/2 cup PLUS 1/8 cup flour
1/3 cup cocoa
1/2 cup flour
2/3 cup brown sugar
2/3 cup white sugar
1/2 cup chocolate chips
1/2 cup vanilla chips
1/2 cup walnuts

You can try to make v-shaped designs or whatever by pushing a knife down along the sides.

Attach tag that says:
Combine contents of jar with 3 eggs,
2/3 cup oil
1 teaspoon vanilla.

Pour into greased pan (11×7″) And bake at 350°F for 32-37 minutes, or 9×9″ For 27-32 minutes.

Queens Royal Rub

1/4 cup mixed peppercorns, black, white, pink
1/4 cup mustard seed
1/4 cup sesame seeds, lightly toasted
1/4 cup ground New Mexican chiles
1/4 cup brown sugar
1/4 cup kosher salt
1/4 cup hot Hungarian paprika
1 dried ancho chile
1 tablespoon cinnamon
1 tablespoon cumin
1 tablespoon rubbed sage
1 tablespoon cayenne
1 tablespoon allspice
1 tablespoon dried thyme
1 tablespoon dried tarragon

Combine peppercorns, mustard seeds, sesame seeds, salt and the ancho chile in a food processor and pulverize. Mix this combination with the other ingredients carefully.

Spread on baking sheets and toast lightly in the oven at 325°F for about 10 minutes. This brings out the oils and develops the flavor more fully.

Keep in the freezer in an airtight container.

Dreamsicle Cookies In a Jar

1/2 cup powdered orange flavored drink mix, such as Tang
3/4 cup white sugar
1 1/2 cups vanilla baking chips
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder

Combine the flour with the baking soda and baking powder. Layer the ingredients in a clean glass wide mouth quart sized jar, starting with the Tang, then sugar, vanilla chips and ending with the flour mixture.

Press each layer firmly in place before adding the next ingredient.

Attach a recipe card with the following instructions to the jar.

Dreamsicle Cookies

Preheat oven to 375°F (190°C).

Empty contents into a large mixing bowl. Add 1/2 cup softened butter, 1 egg slightly beaten and teaspoon vanilla extract. Mix until completely blended.

Roll heaping tablespoonfuls into balls. Place 2 inches apart on a lightly greased baking sheet.

Bake at 375°F (190°C) for 12 to 14 minutes or until tops are very lightly browned.

Cool for 5 minutes on the sheet then remove cookies to wire racks to cool completely.

Makes 2-1/2 dozen

Holiday Cajun Seasoning Jar Gift Mix

2 tablespoons chili pepper
2 tablespoons paprika
2 1/4 teaspoons granulated garlic
1 1/2 teaspoons kosher salt
1 1/2 teaspoons dry oregano
1 1/2 teaspoons dry thyme
1 tablespoon cayenne pepper
3/4 teaspoon fresh ground black pepper

Combine all ingredients in a mason jar and
shake well.

Makes about 1/2 cup.

White Christmas Bars in a Jar

1/4 cup white chocolate or vanilla milk chips
1/2 cup chopped pecans, toasted* and cooled
1/2 cup sweetened dried cherries or cranberries
1/2 cup light brown sugar, packed**
1 cup buttermilk biscuit baking mix
1/2 cup brown sugar, packed**
1 cup buttermilk biscuit baking mix

In 1-quart wide-mouth glass jar, gently layer and pack ingredients in the order listed, beginning with the white chocolate or vanilla chips.

If there is any space left after adding the last ingredient, add more white chocolate or vanilla chips to fill the jar. Place lid on top.

Cut an 8-inch circle of fabric to cover lid. Place fabric over lid; secure in place with ribbon or raffia. Decorate as desired.

Make a gift card to attach as follows:
To make White Christmas Cherry Bars:
Heat oven to 350°F. Empty contents of jar into medium bowl.

Stir in:
1/2 cup (1 stick) butter or margarine, melted
1 large egg
1 teaspoon vanilla extract

Press into an 8-inch square baking pan coated with cooking spray.

Bake for 20 to 22 minutes, or until bars are light golden brown and center is almost set.

Makes 16 bars.

* To toast pecans, place in a microwave-safe dish and microwave on high for 4 to 5 minutes, stirring every minute.

** After measuring the brown sugar, crumble it between your fingers for uniform texture. Be sure to pack the brown sugar firmly in the jar to prevent the baking mix from sifting down through it.

Apple Pie Spiced Hot Tea Mix

1/3 cup crystallized ginger
1 tablespoons whole allspice
1 tablespoons whole cloves
2 cups crisp dried apple chips OR dried apples
12 sticks (2 1/2 to 3 inch each) cinnamon
16 white and/or green tea bags

Divide ginger, allspice and cloves among the infusers of four glass teapots.(If teapots don’t have infusers, cut four 7 to 8 inch squares of double thick cotton cheesecloth. Divide ginger, allspice and cloves among cheesecloth squares. Tie closed with clean kitchen string.) Divide apple chips and cinnamon sticks among teapots. Cover; attach 4 tea bags and serving instructions to each gift.

Makes 4 gift mixers, 4 servings per mix.

Top: Look for apple chips with no added oils or sugar.

To Make Tea: In medium pan, mix spice bag, cinnamons ticks, and 4 cups water. Bring to boiling; Reduce heat. Simmer, covered, for 20 minutes. Remove pan from heat. Add apple chips and tea bags to spiced water mixture. Let tea steep for 5 minutes. Remove and discard tea bags, spice bags, and cinnamon sticks.

Italian Cheese and Sausage Calzone

***IN QUART JAR #1:

2 3/4 cups flour
1 teaspoon italian seasoning

***IN BAGGIE:

1/4 cup tomato powder
1 tablespoon cornstarch
1/4 teaspoon garlic powder
1/4 teaspoon oregano
1/8 teaspoon black pepper
1/4 teaspoon salt
1/8 teaspoon paprika

***IN QUART JAR #2:

1/2 cup sausage or pepperoni TVP — (or 1/2 pound cooked and rinsed sausage)
1/2 cup beef TVP — (or 1/2 pound cooked and rinsed sausage)

***IN VEGETABLE BAGGIE:

1 cup dried broccoli — chopped

***IN SEASONING BAGGIE:

1/4 cup bread crumbs — seasoned
1/2 teaspoon basil
1/4 teaspoon garlic powder
1/4 teaspoon parsley
1 teaspoon italian seasoning
1/4 cup cheddar cheese powder

***ADD ONS:

2 tablespoons grated parmesan cheese
1 tablespoon yeast
2 tablespoons olive oil

Remove oxygen absorber, if using.

FOR QUART JAR #1:
Mix 1 cup warm water with oil. Mix yeast with flour. Combine water and flour mixtures. Knead for 5 minutes. Let rise in greased bowl for 90 minutes. Cut dough into 6 equal parts and roll each part to a circle on a well-floured surface.

Sauce: Whisk Sauce Baggie, parmesan cheese and 1 cup cold water together. Bring to a simmer and cook until thick.

FOR QUART JAR #2:
Bring 1 cup water just to a boil. Add TVP, cover and let sit 10 minutes. Mix broccoli with TVP and simmer until water is gone. Be careful not to burn TVP. Mix TVP with seasoning baggie.

Assembly: Put tomato sauce on each rolled out dough circle, spreading evenly to about 1/2-inch from the edges. Put 1/6th of TVP mixture on half of each dough circle. Fold dough over and pinch to seal and edges well.

Bake at 450°F for 20 minutes.

Glazed Alsatian Honey Spice Bread Mix

For the bread mix

1 1/2 cups flour (do not use bread flour)
1/2 cup whole wheat flour (may substitute light or medium rye flour)
Scant 2/3 cup sugar
2 1/2 teaspoons ground aniseed (may substitute 1 Tbsp whole aniseed, crushed)
1 1/2 teaspoons ground cinnamon
3/4 teaspoons ground cardamom (may substitute ground allspice)
2 teaspoons baking powder
Generous 1/4 teaspoons salt
1/4 cup crystallized ginger, finely chopped
2 teaspoons dried orange peel
3/4 cup golden or dark seedless raisins (or a combination)
1/2 cup confectioners’ sugar (for the glaze)

For the bread and glaze

1 – 1 quart jar bread mix
1 large egg
1/2 cup corn oil, canola or other flavorless vegetable oil
1/2 cup sour cream (may substitute plain yogurt)
1/4 cup clover honey or other mild honey, plus 1 Tbsp for the glaze
1/8 teaspoons vanilla, almond or lemon extract
2 teaspoons hot water, plus more as needed

For the bread mix:

Place the white flour on a sheet of heavy duty aluminum foil.

Use the foil as a funnel to pour the flour into a 1 quart jar. Rap the jar on the counter to even out the layer.

Combine the whole-wheat flour, sugar, aniseed, cinnamon, cardamom, baking powder and salt on the foil, stirring to blend well. Add to the jar; shake and rap the jar on the counter to even the layer.

Dust off the foil; place the ginger and dried orange peel on it. Add to the jar, rapping it to compact the layers.

Place the raisins in a small, sturdy plastic bag; close it tightly and place over the ginger. Put the confectioners’ sugar in a separate small plastic bag; close it tightly and tuck in the top of the jar. Provide a tag or card with the following recipe directions to go with the jar.

Glazed Alsatian Honey Spice Bread:

Preheat the oven to 325°. Grease an 8 1/2 by 4 1/2 inch loaf pan with nonstick cooking oil spray.

Remove the confectioners’ sugar packet from the jar and set aside. Open the raisin packet into a colander and rinse under hot water, then let drain well.

Whisk 1 large egg in a large bowl until lightened and very frothy. Whisk in 1/2 cup of corn oil, canola or other flavorless vegetable oil a few drops at a time, gradually increasing the oil flow. Whisk vigorously until all the oil is incorporated and the mixture is well blended, thickened and creamy looking.

Add the bread mix, 1/2 cup sour cream or plain yogurt, 1/4 cup clover honey or other mild honey and the drained raisins to the bowl, stirring just until well blended. Pour the batter into the pan, smoothing and leveling it into the corners of the pan.

Bake on the middle oven rack for 45 to 50 minutes or until the top is golden brown. Cover with foil and continue baking for 15 to 20 minutes or until a toothpick comes out with just a few particles on the end and the loaf feels firm when pressed in the center of the top. Transfer the pan to a wire rack to cool
until barely warm. Then set the loaf on a serving plate.

To make the glaze, combine the confectioners’ sugar (from the bag), 1 tablespoon of honey, 1/8 teaspoon of either vanilla, almond or lemon extract, and 2 teaspoons of hot water in a small bowl until completely smooth and slightly fluid. If necessary, thin with more water.

Use a round edge knife to spread the glaze evenly over the loaf until the top and sides are coated. Gather any glaze that drips off and spread it over the top again.

NOTE: The jar of mix can be stored at room temperature for up to 1 month, and for up to 2 months if refrigerated. The bread tastes best if allowed to mellow for a few hours before serving. Store, airtight, for up to 1 week.

Chocolate Orange Oat Finger Bars

2 cups quick-cooking oatmeal
2 tablespoons grated orange zest
2 tablespoons all-purpose flour
2/3 cup brown sugar
1 cup miniature semisweet chocolate chips

Layer ingredients into an airtight jar in the order given (starting with oatmeal and working up to chocolate chips).

This recipe will fill a 1 quart container

Makes: 4 cups

To make the cookies:

1/2 cup melted butter, slightly cooled
3 tablespoons corn syrup
2 tablespoons honey
2 tablespoons orange juice
1 jar of cookie mix

Preheat oven to 350°F.

Place butter, corn syrup, honey and orange juice in a large bowl, and stir to combine. Add the contents of the jar and stir until well mixed.

Spread the batter in a greased 9 x 9″ baking pan and bake for 20 to 25 minutes or until the edges of the bars are light brown.

Cool completely in pan before cutting into bars. Serve immediately or store in an airtight container for up to 1 week.

Makes: 9 bars
