Tropical Fruit Freeze

1 6-oz. can frozen orange juice concentrate, thawed
3 cups pineapple juice
1 banana, pureed
1 tablespoon lemon juice
1 12-oz. can ginger ale

Place thawed orange juice concentrate in a 2-quart beverage container. Add pineapple juice and stir. Puree banana with lemon juice in blender and add to orange mixture. Seal container and freeze for several hours until slushy. Stir in ginger ale when ready to serve.

Orange-Pineapple Twister

4 cups cubed fresh pineapple or 2 (20 oz) cans pineapple chunks in unsweetened juice, drained
1 pint (2 cups) orange sherbet
1/2 cup skim milk

In blender container or food processor bowl with metal blade, blend pineapple until smooth. spoon sherbet into conatiner; add milk. Cover; blend until smooth.

Serve immediately

Very Berry Smoothie

2 cups orange juice
1 cup low fat vanilla yogurt
2 small ripe bananas
1 cup berries (fresh or frozen) — strawberries, blackberries, and
raspberries

Place all ingredients in a blender.

Blend for about 10 seconds or until all ingredients are smooth.

Makes 4 servings.

Strawberry Banana Smoothie

1 cup nonfat vanilla yogurt
1/2 cup frozen strawberries
1/2 cup orange juice or skim milk
1 banana, sliced

Place all ingredients in a blender and blend until smooth.

Eggnog

4 fresh eggs (separated into yolks/whites)
1/2 cup sugar (divided into 2 equal parts)
1 cup white rum (dark works)
1 1/2 cups milk (whole or 2%)
1 cup whiskey (Bourbon or Canadian)
1 cup heavy/whipping cream (divided into 2 equal parts)
ground nutmeg

Separate eggs into yolks and whites in separate bowls

Beat egg-yolks with 1/2 of sugar, set aside.

Beat egg-whites until stiff, then mix in other 1/2 of sugar.

Pour the yolks into the whites and mix together slowly.

Stir in white rum slowly.

Stir in milk slowly

Stir in whiskey slowly

Stir in 1/2 of cream slowly

Whip rest (1/2) of cream and fold it into the mixture carefully.

Serve at room temperature by ladling the eggnog into cups and sprinkle nutmeg on the top.

Coffee Alexander

1 cup of chilled coffee
1/2 ounce of Kahlua
1/2 ounce of Amaretto
2 scoops of chocolate ice cream

Mix all ingredients in a blender until smooth. Top with whipped cream and dark chocolate shavings.

Hot Buttered Coffee

1 1/2 cups of fresh brewed coffee
1 tablespoon of rum
1 teaspoon of butter
1 teaspoon of brown sugar
1 whole clove
1/8 teaspoon grated nutmeg

Place butter in mug and then add hot coffee. Add brown sugar and stir well. Finally, add the clove and the rum and sprinkle nutmeg on top.

Irish Kiss

1 1/2 cups of fresh brewed coffee
3/4 ounce of Kahlua
3/4 ounce of Bailey’s Irish Cream
1 1/2 ounce of Cool Whip or your favorite whipped cream

Brew coffee as normal. Add Kahlua and Bailey’s and top off with whipped cream.

Coffee and Coke Float

1 cup of fresh brewed coffee
1 ounce of cream
2 teaspoons of sugar
1 scoop of vanilla ice cream
Coca Cola (enough to top off)

In a large mug, add coffee, cream and sugar and stir. Then add 1 scoop of ice cream and top off with Coca Cola to taste.

La Isla Mocha

1 1/2 cups of coffee of your choosing
1/2 cup whipping cream
4 teaspoons chocolate syrup
2 teaspoon of sugar
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Whip cream, nutmeg, sugar and only 1/4 teaspoon of the cinnamon until it peaks. Put 1/4 teaspoon of cinnamon into each of two mugs. Now add 2 teaspoons of chocolate syrup into each mug. Add 3/4 cup of hot coffee to each mug and stir. Top with the whipped cream and drizzle with a little more chocolate syrup.

Serves 2
