A quick tip

When making a soup, sauce, or casserole that ends up too fatty or greasy, drop in an ice cube. The ice will attract the fat, which you can then scoop out.

Avery Island Deviled Shrimp

3 tablespoons butter
1 lb breaded shrimp (frozen or your own)
Deviled Shrimp Sauce
2 tablespoons butter
1 medium onion, minced
1 clove garlic, minced
1 (10.5 ounces) can beef broth
1/2 cup water
2 tablespoons Worcestershire sauce
1 1/2 teaspoons prepared mustard
1/2 teaspoon salt
1/2 teaspoon Tabasco sauce
1 lemon, juice of

6-8 servings

Mock Oyster Dip

1 package frozen broccoli, chopped, cooked & drained
1 stick oleo
1 medium onion, chopped, sautéed
1 can cream of mushroom soup
1 8 oz. can mushroom pieces, chopped
1 roll Kraft garlic cheese
2 shakes Tabasco sauce

In sauce pan, sauté chopped onions in the oleo. Then combine all other ingredients and cook over low heat until cheese melts.

Honey Mustard Dipping Sauce

1/3 cup spicy brown mustard
3 tablespoons honey
2 tablespoons ketchup
1 clove garlic, minced
5 teaspoons Tabasco sauce

Mix all ingredients in a medium bowl.

Makes about 3/4 cup of sauce.

Baked Cauliflower “Mac” and Cheese

1 large head of cauliflower
2 tablespoons unsalted butter
1/2 cup onion, minced
1 cup heavy cream
1 cup whole milk
1 cup sharp Cheddar cheese, shredded
1/4 cup cream cheese
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon Tabasco
1 teaspoon paprika
Salt and pepper to taste
1 cup sharp Cheddar cheese, shredded
