A quick tip

If you aren't sure how fresh your eggs are, place them in about four inches of water. Eggs that stay on the bottom are fresh. If only one end tips up, the egg is less fresh and should be used soon. If it floats, it’s past the fresh stage.

Peach Pudding Bread

1 can sweetened condensed milk
1/2 cup milk
1/2 cup butter or margarine
Pinch of cinnamon
1 1/2 cups baking mix
1 teaspoon vanilla extract
1 (15 ounce) can peaches

Preheat oven to 350° F.

Melt butter, set aside.

Drain peaches; reserve juice.

Grease a 13 x 9 x 2-inch pan. Place drained peaches in pan. Pour can of sweetened condensed milk over peaches.

More Than Mom’s Bread Pudding

INGREDIENTS for Bread Pudding:

1 loaf slightly dry French bread
1 cup raisins
Rum or bourbon
4 cups milk
1 cup sugar
1/2 cup packed brown sugar
1 cup chopped walnuts or pecans
1 cup shredded coconut
3 tablespoons melted butter
2 tablespoons vanilla extract
4 eggs, beaten
Rum Sauce

INGREDIENTS for Rum Sauce:

1 cup confectioners’ sugar
1/2 cup butter
1/2 egg yolk

Cranberry Pudding

1-1/4 cups flour, sifted
2 teaspoons baking soda
1/4 cup molasses
1/3 cup hot water
2 cups raw, whole cranberries

Sift dry ingredients and stir in molasses. Pour hot water into mixture and blend. Stir in cranberries. Sprinkle in a few chopped nuts. Batter will be stiff. Pour into an 8 inch square, greased pan.
