A quick tip

When defrosting meat from the freezer, pour some vinegar over it. Not only does it tenderize the meat; it will also bring down the freezing temperature of the meat and cause it to thaw quicker.

Sugar Free Lemon Pie Filling

3 cups water
24 packs Equal
4 egg yokes
6 drops yellow food coloring
6 heaping tablespoons corn starch
1/3 cup lemon juice

Mix all ingredients in sauce pan and cook on medium heat until thick; stirring constantly. Pour into prepared baked pie crust 9″.

Can be used as a dessert serve with whipped topping also.

Sensational Cherry Pie

Pie Dough
1 1/2 cups Crisco Butter Flavored Shortening
1/2 cup sugar
2 tablespoons almond extract
1 egg (beaten)
2 1/4 cups flour

Stir Crisco, almond extract, sugar and beaten egg until creamy. Add flour. Do not overmix dough, cover with plastic wrap and chill for 30 minutes in refrigerator.

Perfect Pie Crust

2 cups flour
1 cup cake flour
2 tablespoons super rich butter powder
1 cup Crisco shortening
1 whole egg
1 tablespoon cider vinegar
1/2 teaspoon salt
1/3 cup ice water

Mix the flours and butter powder and cut in the shortening until it resembles coarse crumbs.

Cherry Red-Raspberry Pie

Filling:
1 10-oz. Package of frozen red raspberries
2 cups of canned sour pitted cherries (drained)
1 cup sugar
3 tablespoons cornstarch
2 tablespoons butter
1/4 teaspoon salt

15 oz can pumpkin
1/2 cup EggBeaters
1 1/2 cup skim milk
1/2 – 3/4 cup Splenda – depends on how sweet you want it
