A quick tip

If you aren't sure how fresh your eggs are, place them in about four inches of water. Eggs that stay on the bottom are fresh. If only one end tips up, the egg is less fresh and should be used soon. If it floats, it’s past the fresh stage.

Baked Haddock Creole

2 lb. haddock fillets
1 teaspoon salt
2 tablespoons butter
1 small onion, minced
1/2 clove garlic, minced
2 cups strained canned tomatoes
1 bay leaf
dash cayenne pepper

Sprinkle fillets with salt and place in a shallow uncovered baking pan.
